The heart of evo3 is its concept. For every product sold, a tree will be planted in a deforested area in Africa – specifically in Ethiopia and Madagascar.

The olives harvested are from a single estate, family-farm, carefully hand-picked and always respecting the local ecosystem. They are farmed ethically and sustainably. The olive oil is produced only from the native types of olives found on the island of Lesvos, the Kolovi, Adramatini, and Latholia. These olives are grown in two different microclimates on the island of Lesvos, mountainous and coastal.

The acidity of the olive oil is also of exceptional quality, stictly monitored to range between 0.35%, and is cold-pressed, which allows it to be labelled as extra virgin and categorized as exceptional quality.

The taste is delicate and versatile, with aromas of ripe fruit, green grass, tomato and notes of walnut. Taste exhibits abundant fruitiness, green grass, sweetness, some bitterness, light pungency and notes of hay, with exceptional harmony, high complexity and high persistence. It has a liquid texture (low glutinosity – smooth taste), due to its relatively high level of unsaturates and a golden light colour.
